Tonight’s dinner inspired by my girl forktofuel🍴Sweet Sriracha Salmon + crunchy caramelized green beans atop creamy coconut brown rice. 😍 go look at her page- my salmon photo does not do the recipe justice.

🔹Garlic Sesame Green Beans
1 lb green beans
2 tsp sesame oil
1 tbsp garlic powder
1 tbsp ground sesame seeds
1 tsp salt (or more to taste)
1/2 tsp chili flakes (optional)

In a double boiler, microwave, or large sauté pan with water, steam green beans to soften them slightly, about 3-5 minutes (times vary with method). Heat a large skillet over medium high heat. When the pan is hot add the sesame oil then add green beans and stir until evening coated with oil. Next add salt, garlic powder, and sesame seeds and cook for another 2 minutes, stirring often to ensure everything is coated.

🔹Instantpot Coconut Brown Rice:
1 and 1/4 cups brown rice
1 14 oz can coconut milk
1/2 cup water
1 tsp salt

Combine all ingredients. Pressure cook on high for 20 minutes then quick release. Give the rice a good stir after taking the lid off to combine any extra coconut milk.
