Tofu is a versatile protein that can be used in so many dishes! If you’re interested in reducing your meat consumption, tofu is a great option that easily replaces meat in most recipes and takes up the flavors of whatever spices and herbs you add to it. This tofu scramble makes a great meal any time of day!

Ingredients
1 block firm tofu
1 tbsp olive oil
1 red pepper, chopped
1 cup mushrooms, chopped
1 small onion, diced
Large handful of arugula
1 tsp garlic powder
1 tsp smoked paprika
1/4 tsp turmeric
Salt and pepper to taste

Directions
Heat olive oil in a skillet. When the oil is hot, use your hands to crumble the tofu into the pan. Use a spatula to break up the big clumps. Cook over medium high heat for about 10 minutes to allow the water the evaporate from the tofu. Stir every few minutes.

Add your vegetables and continue stirring every few minutes until the onion is translucent and peppers and mushrooms are soft. Throw in the arugula or other greens.

After most of the water has cooked off the pan, add your spices and seasonings. You can customize using whatever flavors you prefer. Nutritional yeast, cumin, or fresh basil would also be delicious!
