The base for these Banana Oatmeal Waffles is just 4 ingredients and can quickly be thrown together in the morning or prepped ahead and frozen for an easy breakfast throughout the week. The good news? If you don’t have a waffle maker, the same recipe can be used as a pancake batter! This recipe is well balanced in protein, fats, and carbohydrates so it’s a great way to fuel your mornings.

🧇 Ingredients:
2 eggs
1/2 cup oats
1/2 ripe banana, mashed
1 tsp chia seeds
1/4 tsp almond or vanilla extract (optional)

🧇Directions
Combine all ingredients in a bowl. I like to use something with a spout because it makes it easier to pour the batter.

Allow batter to sit for 10 minutes so that the oats and chia seeds can soak up some of the liquid of the egg.

Grease your waffle maker or pan with a small amount of oil and add 1/4 cup of the batter. Cook until the sides of the waffle are slightly browned. If making pancakes, flip after 3-4 minutes.

Top with peanut butter, greek yogurt, and cinnamon.
