Taco Bowls with alllllll the things 🌮
These whip up quick and make for an easy weeknight dinner or meal prep for the week. If you’re trying to incorporate more plant based meals, these bowls are a fun way to experiment. The recipe is adaptable to meet all of your vegetarian/vegan, GF, DF and beyond needs!
1 lb ground beef (can substitute plant based meat, 1 can pinto or black beans, or block of tofu)
1/2 tsp Garlic powder
1/2 tsp Paprika
1 tbsp Chili powder
1 tsp Cumin
1 tsp salt and pepper
1 large onion, chopped
1 cup sliced mushrooms
1 cup sliced bell pepper
Heat a large skillet over medium heat. Once hot, add tbsp of oil and add ground beef to pan. Use a spatula to crumble meat. Stir continuously until meat is cooked through, about 10 minutes.
Once meat is finished cooking, drain liquid from pan and add meat back in.
Add all spices to the pan and stir to evenly coat the meat. Set aside.
Add mushrooms, bell pepper, and onion to hot skillet. Sauté until soft, about 12-15 minutes.
Assemble the bowl using greens, protein, and sautéed veggies as your base.
Toppings: 🫒 olives, 🧅 pickled onion, 🌿 parsley, 🥑 avocado, sour cream, 🧀 shredded cheese, 🍅 tomatoes (did I miss anything?)
