🥗PSA: salads don’t have to be green! 🥗

If you’re looking for a break from leafy greens, give this recipe a try. It’s crunchy + colorful and won’t wilt overnight. In fact, it tastes better the next day after it’s had a chance to marinate in a simple dressing.

Ingredients
1 small head of red cabbage, shredded
3 large carrots, shredded
1 large apple any variety (I like something tart), diced
1/2 cup pumpkin seeds, toasted

Dressing
1/2 cup olive oil
1/4 cup balsamic vinegar
2 tbsp honey
1 tsp garlic powder
1/2 tsp salt
Fresh black pepper

Directions
Combine all salad ingredients in a large bowl.
Mix salad dressing together. I like to heat the honey for about 15 seconds in the microwave so that it’s completely liquid and easier to stir.
Pour dressing over salad and toss until well coated
