Nachos loaded up with alllll the things 💫

Ingredients:
1/2 cup cooked Quinoa
1/2 block firm Tofu
Taco seasoning (chili powder, onion powder, smoked paprika, oregano, garlic powder, cumin, salt, pepper)
Tortilla chips
Black beans
Olives
Green onions
Pickled red onion
Cherry tomatoes
Sour cream
Cheese
Guacamole

Directions
Press tofu to remove excess water.
Heat a large pan over high heat. When pan is hot, add a tablespoon of cooking oil. Put the block of tofu in the pan and break it up into small crumbles using your spatula. Stir tofu frequently for about 10 minutes until most of the water has cooked off.
Add cooked quinoa and spices to the pan and stir until the tofu and quinoa are evenly coated.

Assemble the nachos!
I used beans, quinoa, and tofu as my protein base, added some pepper jack cheese + olives and baked at 350 until the cheese was melted and chips were crispy (about 10 minutes). All that’s left after that is to top top top! 🥑 🧅 🫒 🍅 🧀
