🥥 Lemon Coconut Chia Pancakes 🥥

🍋Wet Ingredients
1 egg
1/4 cup almond milk
1/2 tbsp melted coconut oil
1/2 tbsp maple syrup
1/2 tsp of almond extract (or vanilla)
Pinch of lemon zest
1 tsp lemon juice

🍋Dry Ingredients
1/2 cup flour (sub almond flour for GF)
1/8 tsp salt
1/2 tsp baking powder
1 tbsp chia seeds

🥞 Directions
+ preheat pan to medium heat
+ add wet ingredients to a small bowl and whisk together
+ add dry ingredients to the bowl and stir until combined
+ add 1 tsp of coconut oil or butter to pan. Once melted, add 1/4 of batter and cook for 5 minutes or until lightly browned. Flip and cook on the other side for another 3-5 minutes
+ top with maple syrup
