Kiss the UV Index goodbye with this Coconut Curry Lentil Soup 🍂

🌿 Ingredients
1 large onion, diced
3 cloves garlic, minced
2 tbsp grated ginger
2 tbsp tomato paste
1/2 tsp red pepper flakes
2 tbsp curry powder
1.5 cups red lentil
4 cups broth
1 15 oz can diced tomatoes
1 15 oz can coconut milk
2 tbsp fish sauce
2 tbsp maple syrup
Salt and pepper to taste
Chopped cilantro for garnish

🌿 Directions
Heat a large pot over medium heat then add 2 tbsp olive or coconut oil. Once the oil is hot, add the onion and garlic. Stir frequently until onion is translucent, about 10 minutes. Add the ginger and continue to stir for 2 more minutes.

Add the tomato paste, curry powder, and red pepper flakes and stir for an additional minute.

Add the broth, lentils, canned tomatoes, and coconut milk and stir to combine. Simmer over low/medium heat for 30 minutes. the soup will start to thicken.

Mix in the maple syrup and fish sauce, then season with salt and pepper. Before serving, garnish with cilantro.
