I’m not big into baking so I always love a foolproof dessert recipe that can be thrown together without a fuss. These almond cookies are one of my go-tos. They were my favorite cookie that bastyruniversity sold in their incredible cafeteria while I was a student there. Today I’m delivering them to a friend on her birthday 🥳

🎈Ingredients
▫️2.5 cups almond flour
▫️1/3 cup melted coconut oil
▫️1/3 cup maple syrup
▫️1/4 tsp almond extract
▫️1/2 tsp cinnamon
▫️1/2 tsp baking soda
▫️1/4 tsp salt
▫️Almonds to top (optional)

🍪 Directions
▫️In a large bowl, mix together all ingredients except almonds until well combined.
▫️Using a small cookie scoop, drop balls of dough onto baking sheet lined with parchment
▫️Top each cookie with an almond if you’d like
▫️Bake at 350 for 10 minutes or until bottoms of the cookie are light brown
▫️Makes about 20 small cookies
