A veggie burger made with pantry staples that is so unfussy you can change almost every ingredient and it still tastes magical. I used minimalistbaker easy grillable veggie burger as an outline and made tweaks based on what I had available. The best type of recipe!

🍔Ingredients
1/2 cup of cooked grains (quinoa/rice)
1 cup black beans
1/4 cup diced onion
1 tbsp minced garlic
1/4 cup toasted nuts (cashews/walnuts/pecans)
1/2 tbsp each cumin, smoked paprika, garlic powder, chili powder
1/2 tbsp sugar
1/4 cup oats or breadcrumbs
1/4 cup chopped parsley
2 tbsp BBQ sauce
1/2 tsp salt and black pepper

🥑Directions
1. Over medium heat, sauté garlic and onion until fragrant, about 5 minutes
2. Rinse black beans and pat dry with paper towel then add to a large bowl and mash well with the back of a fork
3. In a food processor or blender, add nuts, spices and sugar and blend for one minute
4. Add cooked grains, nuts and spice mixture, oats, onion and garlic, BBQ sauce, parsley, salt and pepper to the beans and stir to combine.
5. Form burger patties using a half cup measuring cup to scoop up the mixture then use your hands to form. Makes 4 patties.
6. Heat skillet over medium heat and add oil when skillet is hot. Cook patties on each side for 5-7 minutes.
7. Top with avocado, pickled onions, garlic aioli and greens
